Full Recipe:

Ingredients

  • For the Chicken:

    • 1 kg (2 lb) skinless chicken thighs, cut into 5cm (2″) pieces

    • 3 tablespoons fish sauce

    • 1 bird’s eye chili, deseeded and finely minced (optional)

  • For the Caramel Sauce:

    • 3 tablespoons vegetable oil

    • ¼ cup brown sugar, tightly packed

    • 1/3 cup ginger, finely julienned (about 5 cm/2″ thick piece)

    • 2 eschalots (French onions), halved and finely sliced (or substitute with red onion)

    • ½ cup boiling water

  • For Garnish and Serving:

    • Fresh coriander/cilantro or green onion slices

    • Red chili, finely sliced (optional)

    • Jasmine rice or other plain rice

Directions

  1. Prepare the Chicken: Toss the chicken pieces with fish sauce and chili (if using). Set aside while preparing the other ingredients.

  2. Make the Caramel Sauce: In a large non-stick pan, add the oil and brown sugar. Place over medium heat, stirring to melt the sugar into a caramel. Once melted, remove the pan from the heat to add the chicken. Be careful as the caramel may sizzle.

  3. Cook the Chicken: Return the pan to the stove and add the ginger, eschalots, and chicken. Stir briefly to coat the chicken in the caramel sauce. Add boiling water and bring the mixture to a simmer.

  4. Braise: Simmer the chicken for 10-12 minutes until the sauce reduces and coats the chicken in a thick glaze. Stir occasionally to prevent burning. Once the sauce thickens, it’s ready to serve.

  5. Serve: Garnish with fresh coriander or green onions, and serve with jasmine rice or another plain rice of your choice. Optionally, add red chili slices for extra heat.
