940g pork ribs

80ml rice vinegar

20ml balsamic vinegar or aged vinegar

80g rock sugar

1 lemon

4.5g salt

15ml cooking oil

700ml water

Stir the ribs with starch, rinse them clean, and soak them in soda water for 30 minutes to tenderize the meat. For best results, refrigerate the ribs for 6 hours (optional).

Dry the ribs using kitchen paper.

Heat the cooking oil in a pot over high heat, then add the ribs and fry or stir-fry them for about 3-5 minutes until they release some fat.

Add salt, rock sugar, balsamic vinegar, 40ml rice vinegar, and water. Cut the lemon into four pieces and squeeze the juice from two pieces into the pot.

Bring to a boil on high heat, then reduce to medium heat and simmer for 20 minutes, turning occasionally. Be mindful in the last 8 minutes to avoid reducing the sauce too much.

Once ready to reduce the sauce, add the remaining 40ml rice vinegar and finish reducing. Squeeze the remaining lemon pieces over the ribs (optional if you prefer less acidity).
