Ingredients

  • 1 lb carrots

  • 1 onion

  • 3 tbsp miso paste

    • 1 cup cooked Jasmine rice

    • 2 tbsp toasted sesame seeds

    • 1 tsp red pepper flakes

  • For the Chili Ginger Oil:

    • 1-inch piece of ginger

    • 1 red chili

    • 2 tbsp vegetable oil

    • 1 tbsp mixed seeds

    • 1 spring onion

Directions

  1. Prepare the Soup: Peel and chop the carrots, onion, garlic, and ginger. Chop the red chili and set aside.

  2. Cook the Base: In a large pot, sauté the onion, garlic, ginger, and chili until fragrant. Add the carrots and cook for a few more minutes. Stir in the miso paste and vegetable stock, and bring to a boil.

  3. Simmer the Soup: Reduce the heat and let the soup simmer for 30 minutes until the carrots are soft.

  4. Blend the Soup: Using an immersion blender, blend the soup until smooth. Adjust seasoning as necessary.
