2 boneless skinless chicken breasts, sliced into 4 thin pieces

7 oz rigatoni (or any pasta of your choice)

1 ½ tbsp Cajun seasoning, divided

3 cloves garlic, minced

½ onion, sliced

½ red bell pepper, sliced

½ cup tomato sauce (or crushed tomatoes)

1 cup heavy cream

½ cup pasta water (reserve from cooking the pasta)

¼ cup Parmesan cheese, grated

Marinate the Chicken:
In a medium bowl, mix the chicken with olive oil and 1 tbsp of Cajun seasoning. Massage to coat the chicken evenly, then set aside. -
Cook the Pasta:
Cook the pasta in salted water, but undercook it by about 1 minute from the package instructions. Reserve about 1 cup of pasta water and set aside. -
Cook the Chicken:
Heat a skillet over medium heat and drizzle with oil. Cook the marinated chicken for about 2-3 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside. -
Prepare the Sauce:
