1 lb salmon fillets (skin removed)

3 tablespoons vegetable oil (divided)

1 cup grape tomatoes

Prep the salmon:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a small bowl, mix lime juice and Cajun seasoning. Rub this mixture all over the salmon fillets. -
Cook the veggies:
