Full Recipe:

Ingredients

  • 1 package small wonton wrappers

  • 1 package ground chicken (or 4 chicken breasts ground in a food processor)

  • 1 large package of fresh spinach (cooked down with a little salted water and chopped)

  • 1 onion, chopped

  • 1 cup feta cheese

  • 2 cups mozzarella cheese

  • 1 egg, beaten (for egg wash)

  • 1 teaspoon Cavender’s Greek seasoning

  • Salt and pepper to taste

  • 1 inch of frying oil (in skillet or Dutch oven)

Directions

  1. Prepare the filling: Heat oil in a skillet and cook the ground chicken and chopped onion, seasoning with salt, pepper, and Cavender’s Greek seasoning. Drain any fat.

  2. Mix the filling: Combine the cooked chicken mixture with chopped spinach, feta, mozzarella, and the beaten egg. Taste the mixture and adjust seasoning as necessary.

  3. Assemble the rolls: Place a wonton wrapper in front of you, so it forms a diamond shape. Add about 1 tablespoon of the chicken mixture in the center. Fold the sides over the filling, then fold the bottom tip up and over. Use the egg wash on the top remaining corner and roll upward to seal the edges tightly.

  4. Fry the rolls: Heat frying oil in your skillet or Dutch oven to 350°F (175°C). Fry the rolls on both sides until they are golden brown and crispy, about 5 minutes. Remove and drain excess oil.

  5. Serve: Serve the rolls warm, preferably with a creamy feta dressing on the side for dipping.
