Ingredients

  • 2 Tbsp vegetable oil (neutral tasting)

  • 1 stalk green onion, sliced (dark green parts separated)

  • Chili flakes (to taste)

  • 2 Tbsp dark soy sauce

  • 1 Tbsp rice vinegar

  • 2 cups broccolini (or bok choy)

  • 2 cups frozen shelled edamame beans

  • Optional garnish: Toasted sesame seeds

Directions

  1. Cook the noodles according to the package instructions (about 3 minutes).

  2. Meanwhile, heat the vegetable oil in a large pan over medium-high heat. Add the garlic and the light parts of the green onion. Sauté for 2 minutes. Add chili flakes (or gochugaru) and cook for another minute.

  3. Reduce heat to low, then stir in the soy sauce and rice vinegar. Use tongs to transfer the noodles from the pot (with some cooking water) to the pan, mixing everything together.

  4. In the same pot with the boiling water, add the broccolini and edamame. Cook for 3 minutes until done to your liking, then drain.
