  • 20g pecorino, grated

  • Flour, for dredging

  • Panko breadcrumbs, for coating

For the Red Pepper Sauce:

  • 10ml extra virgin olive oil

  • 3 garlic cloves

  • 1 white onion

  • 1 tin piquillo peppers

  • 2g smoked paprika

  • 15ml white wine

  • Splash of water

  • Salt & pepper, to taste

Directions

  1. Boil the Potatoes: Peel and boil the potatoes until soft. Mash with butter, salt, and pepper until creamy.

  2. Cook the Bacon: Grill the bacon until crispy, then finely chop it and mix into the mashed potatoes.

  3. Form the Croquettes: Shape mashed potato mixture into small balls. Insert a cube of mozzarella into the center and reshape.

  4. Bread the Croquettes: Set up 3 bowls—one with flour, one with whisked eggs, and one with panko breadcrumbs. Dip each croquette into flour, then egg, then breadcrumbs. Set aside on a tray.

  5. Make the Red Pepper Sauce:

    • Chop garlic, onion, and piquillo peppers.

    • Sauté garlic and onion in olive oil until slightly caramelized.

    • Add peppers and cook 4 minutes.

    • Add white wine and cook for 2 minutes.

    • Stir in paprika, salt, pepper, and a splash of water. Simmer briefly.

    • Blend the sauce until smooth.

  6. Cook the Croquettes: Deep fry the croquettes at 170°C (340°F) for 4–5 minutes until golden. Alternatively, bake or air fry for a healthier version.
