Ingredients

  • 2 slices of sourdough bread

  • 1 large onion, thinly sliced

  • 2 tablespoons olive oil

  • 1 tablespoon butter

  • 4 ounces brie cheese, sliced

  • Fresh thyme leaves

  • Honey for drizzling

  • Salt and pepper to taste

Directions

  1. Caramelize the Onions: In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions turn golden and caramelized (about 20-25 minutes). If necessary, deglaze the pan with a splash of water. Season with pepper to taste and set aside.

  2. Prepare the Toast: Preheat the oven to 350°F (175°C). Place the sourdough slices on a baking sheet and toast them in the oven for 5-7 minutes or until crispy and lightly browned.

  3. Assemble the Toast: Spread a generous layer of caramelized onions over each slice of toasted sourdough. Add slices of brie cheese on top of the onions. Sprinkle with fresh thyme leaves.

  4. Melt the Brie: Return the toasts to the oven for 5 minutes or until the brie begins to melt.

  5. Finish with Honey: Remove the toasts from the oven and drizzle with honey.

  6. Serve: Serve immediately, garnished with additional fresh thyme if desired.
